The tastiest vegan toastie to assemble at home

A toastie, but vegan? Yes, it can really be done, just leave the discovery of such a nice recipe to our neighbors at FavorFlav. I just saw hummus on the ingredient list and walnuts and garlic. Enjoy.

More and more people are seeing the benefits of eating vegan. Some do it because they are against animal cruelty, others find meat unappetizing, and some vegans choose it because it's better for the environment. Whatever your reason, vegan food is super delicious!

Ingredients

  • 2 slices of white spelt bread
  • ½ tbsp sun-dried tomatoes, chopped
  • 4 slices of cucumber
  • 1 small handful of bean sprouts, washed

For the pumpkin hummus

  • 3 tbsp pumpkin cubes
  • 4 tbsp hummus
  • 2 tbsp chickpeas, cooked
  • 2 tbsp extra virgin olive oil
  • 1 clove of garlic, finely chopped
  • 1 tbsp honey
  • 1⁄2 tsp turmeric powder
  • 1⁄4 tsp dried chili pepper, chopped 1 sprig of coriander, finely chopped
  • Salt and black pepper

For the kale-walnut pesto

  • 200 g kale
  • 50 g unsalted walnuts, shelled, roasted
  • 1 clove of garlic, finely chopped
  • 1 tsp lemon zest
  • 1 tbsp lemon juice
  • 1 tbsp olive oil
  • 1 tbsp Parmesan cheese, grated
  • Salt

For the pumpkin hummus

Line a baking sheet with parchment paper. Top with the pumpkin cubes and sprinkle with salt and black pepper.

Roast the pumpkin cubes in the oven for about 10 minutes until they are soft.

Mix hummus, chickpeas, roasted pumpkin, olive oil, garlic, honey, turmeric powder, chili pepper, and coriander well together and your delicious pumpkin hummus is ready!

For the kale-walnut pesto

Put the kale, walnuts, garlic, lemon zest, lemon juice, and olive oil in a blender.

Blend until smooth.

Then stir in the Parmesan cheese and season with some salt.

Preparation method for toastie

Spread one slice of spelt bread with the pumpkin hummus.

Spread the sun-dried tomatoes over it.

Top with the other slice of spelt bread and grill the toastie for 5 minutes.

After grilling, add the cucumber and bean sprouts in between.

Serving

Cut the toastie diagonally in half and serve with the kale-walnut pesto.
