This is how you make a next level charcuterie board

A drink is of course not complete without a snack board. But getting a bit creative with a surprising board can sometimes be quite tricky. Cookbook author Sabrina Faude-Rôle lends you a hand with her new book From the Board. The book offers 30 original ideas for, among others, a Thai, French, Swedish, and vegan snack board. So leave those slices of liver sausage and blocks of young cheese behind and go for a real bistro snack board like this one, with garden herb butter, herb dressing, and cheese with nuts.

INGREDIENTS

For the garden herb butter
6 sprigs of chervil
12 sprigs of chives
100 g soft salted butter
1 pinch of freshly ground black pepper

For the herb dressing
6 sprigs of mint
6 sprigs of flat-leaf parsley
1 spring onion
1 clove of garlic
4 tbsp olive oil
juice and grated zest of 1/2 untreated lemon
1 pinch of salt

For the cheese with nuts
200 g gorgonzola
200 g cream cheese
200 g comté, grated
2 pinches of freshly ground black pepper
100 g shelled walnuts
100 g crushed hazelnuts

How to make the garden herb butter

  1. Wash the chervil and chives, pat them dry, and chop them finely.
  2. Mix the herbs with the butter and black pepper and form a ball of butter.
  3. Wrap the butter in baking paper and store in the refrigerator until use.

How to make the herb dressing

  1. Wash the mint, parsley, and spring onion and pat them dry. Peel the garlic clove.
  2. Finely chop the parsley and mint and finely chop the garlic and spring onion. Mix everything in a bowl with the olive oil, juice and zest of the lemon, and salt.

How to make the cheese with nuts

  1. In a bowl, mix the gorgonzola, cream cheese, comté, and black pepper.
  2. Spread plastic wrap in a cross shape and place the cheese mixture in the center. Fold the wrap around it and form a ball of cheese. Place it in the refrigerator for 1 hour. 3. Lay out plastic wrap in a cross shape again and place a portion of the walnuts and hazelnuts on top.
  3. Remove the cheese ball from the wrap and place it in the center of the nuts. Evenly distribute the remaining walnuts and hazelnuts over it.
  4. Fold the plastic wrap closed, form a ball, and store it in the refrigerator until use.

How to complete the snack board

To complete the bistro snack board, you can also add these ingredients: different types of cheese, raw ham in thin strips, slices of cooked ham, country pâté, sausage, rillettes, pickles, dried plums, apricots, endive leaves, grapes, cherry tomatoes, cashews, and various types of bread.
