This is what you want: Pornstar Martini cheesecake

In the category of ‘why didn't I know this in God's name yet’ and ‘I want this NOW’, I present to you today: the Pornstar Martini cheesecake. Most people know the Pornstar Martini, but if not: it is a cocktail that you absolutely want to try once. Deliciously sweet, consisting of vanilla vodka, passion fruit juice, and a shot of prosecco on the side. Also garnished with half a passion fruit with a little spoon in it, and Klaas is Kees. Very simple actually, and if you've had it before, you're probably thinking now: of course that fits in a cheesecake.
And now, it's quite easy to make as a cocktail, but the cheesecake is just as easy. It doesn't even need to go in the oven. HOPPA. I got this recipe from Delish, which looks definitely delicious and it only takes 25 minutes to make. The only point of criticism is that according to them, you can serve 12 people with it; I would halve that. Because I don't do meager portions of a Pornstar Martini Cheesecake.
You will need:
For the base:
150g Digestive biscuits
75g unsalted butter, melted
For the filling:
500g cream cheese for cheesecake
100g powdered sugar
1 tsp vanilla extract
130ml heavy cream
70ml mascarpone
100g passion fruit curd or jam
2 lime zests
For decoration:
150g passion fruit curd or jam
2 tsp prosecco
1/5 lime zest
1 passion fruit
Here's how to make the Pornstar Martini cheesecake
1. Make the base in a 20.5cm springform pan. Crumble the Digestive biscuits and mix them with the melted butter. Put this mixture in the springform pan and press down well. Let it cool afterwards.
2. Add the cream cheese, powdered sugar, vanilla extract, heavy cream, and mascarpone together and whip it into one whole. Finally, add the passion fruit curd and lime zest. Then pour everything into the springform pan and smooth it out. Place the cake in the refrigerator for at least six hours.
3. Make the Prosecco dressing by mixing the 2 teaspoons with the passion fruit curd and draping it over the cake. Then remove the seeds from the passion fruit and sprinkle them over the cake, along with the remaining lime zest. Let it cool a bit more and enjoy.
