After a hectic day, running from place to place and a packed diary, you really don't feel like spending hours in the kitchen. We understand that. You want to conjure up something tasty that is not just a quick snack, but does not have to take hours. Because while we all crave a quick meal from time to time, you don't want to settle for a boring, quickly made meal every day either. Luckily, I have something for you! The what? Yep, I get that this sounds a bit weird. What is a dumpling traybake? Let me break it down for you: a traybake is a meal from the oven. No, not a casserole. You mix all sorts of things together, throw it on the baking sheet, and voila, it's ready. These recipes are always popular on TikTok, but there's something new: a traybake with dumplings. So. The shopping list (for 1 to 2 people)

  • 1 large can of coconut milk (400 ml)
  • 2 tablespoons red curry paste
  • Generous splash of soy sauce
  • Generous splash of sesame oil
  • 3 teaspoons minced garlic or 3 cloves
  • 2 handfuls of spinach
  • 12 frozen chicken dumplings (can also be vegetarian)
  • White and black sesame seeds
  • 2 spring onions
  • 300 grams of white rice

The preparation

Step 1: Build the sauce

Okay, okay, this is called a traybake, but it's actually easier to do this in a baking dish. So take my advice and grab one. Then we start on the sauce. And this? It's super simple. First, preheat the oven to 200 degrees. Then it's time to cook. Pour the can of coconut milk completely into the dish. Then add two large scoops of red curry paste. Stir this well together with a whisk. Add a generous splash of soy sauce and sesame oil and stir again. Then add the garlic. If you're using fresh, this is the moment to peel, chop, and press it. Grab two handfuls of spinach and add this to your concoction.

Step 2: the gyozas

Spread everything over the dish. Place the gyozas upright with the bottom down on the sauce. You can distribute these all over the baking dish. You don't need to thaw them. Because yes, who has the time and energy to let those things thaw? Not you, after a day like that. That was it for the preparations: now it can go in the oven.

Step 3: into the oven and prepare further

Cover the dish well with aluminum foil. Ready? Then it can go in the oven for 27 minutes. If you want extra crispy gyozas, you can remove the aluminum foil for the last five minutes so it can bake nicely. In the meantime, you will prep the last things: the rice and the spring onion. Boil some water and cook the rice to your liking. You serve this alongside the dumplings, so you have a really good meal after such a long day. You could use that. Don't feel like slaving away in the kitchen? Or have you secretly been snacking all day? Then skip the rice. Slice the spring onion into rings and you're done with all that prep.

Step 4: finishing touches

The time has come to put the finishing touches. Sprinkle the spring onion over the traybake. Add some crispy chili oil if you want a bit more heat. Sprinkle white and black sesame seeds over it and hello: there is your dumpling traybake. Easy and oh so delicious.
