Easy recipes of the week: spicy rigatoni

“What are we eating today?” It’s probably the most asked question in the world. After a day full of hustle, running from place to place and an overflowing agenda, you really don’t feel like spending hours in the kitchen. We understand that. You want to whip up something delicious that isn’t just a quick bite, but doesn’t take hours either. Because while we all sometimes crave a quick meal, you also don’t want to settle for a boring, quickly made meal every day. Luckily, I have something for you! In the Easy Recipes of the Week section, we search every Monday for the fastest, easiest, and tastiest recipes that you can put on the table in no time. This week: spicy rigatoni pasta.

Now that it’s getting colder, I only crave nice warm meals. Say goodbye to that watermelon salad with mint, because it’s time for stamppot, soup, and pasta. And that last one, we love. Pasta is sacred, especially in my house. That’s why we chose a pasta dish this week, just because we can.

The shopping list (for 2 people)

  • 300 grams of rigatoni
  • 30 ml avocado oil
  • 15 grams of salted butter
  • 50 grams (1.5) sliced shallot
  • 15 grams (3 cloves) finely chopped garlic
  • 30 grams of tomato paste
  • 80 ml of leftover pasta water
  • 1 teaspoon of salt
  • ½ teaspoon of pepper
  • 1 teaspoon of garlic powder
  • ½ teaspoon of chili flakes
  • ½ teaspoon of Italian herbs
  • 400 ml of cooking cream
  • 25 grams of grated Parmesan cheese
  • 50 grams of grated mozzarella

The preparation:

Step 1: Cook the rigatoni

Bring your pasta to a boil. Let it cook until it’s al dente.

Step 2: The sauce

While the pasta is cooking, you’ll work on the sauce. Chop the shallot and then place your frying pan on medium heat. Once it’s warm, add the avocado oil, butter, and shallots. Let this sauté for a minute while stirring continuously. Then add the garlic and tomato paste. Cook this for a minute. After that, add the pasta water; this will turn the onion, tomato paste, and garlic into a sauce. Let this simmer for at least two minutes.

Step 3: Let it simmer

After those two minutes, add the cooking cream. Mix it in until the sauce has a light orange color. This is the moment to add spices like pepper, salt, chili flakes, and Italian herbs. Let that simmer for a bit longer. By now, your pasta should be cooked, so you can drain it.

Step 4: Cheese really makes the sauce

Lower the heat and add your freshly cooked pasta to the pan. Sprinkle in the Parmesan cheese and mozzarella and mix until melted and a creamy sauce remains. Turn off the heat and it’s time to serve. You can sprinkle some fresh parsley, Parmesan cheese, or chili flakes over your pasta if you like, but otherwise, this is really the end of your cooking session. If you want more vegetables, you can certainly add some red bell pepper or zucchini. Still craving protein? Then, before you cook the pasta, first fry some chicken breast. Keep it aside until the rest of the dish is ready. It doesn’t even take much more effort.

Well, that was easy, right? In just about 15 to 20 minutes, a whole meal is on the table. That’s ideal when you don’t feel like cooking anymore. I know for sure what I’m going to make when I get home tonight. (Yes, even I, who walks through the front door at 8:00 PM, still feel like making this pasta.) Enjoy!
