Healthy lunch, even in the office works out this way

You know him/her (yes, I’m sure): that one colleague who always brings delicious lunches to work. Those little works of art and healthy gym-girl recipes. And you? You’re sitting there with your brown sandwich with cheese. #Boring. Believe me, I’ve been there. But I’m going to help you. For a while now, I haven’t been jealous of other people’s lunches, but outplay I outdo my colleagues with these 5 lunch recipes. Perfect: one recipe for every workday. And the best part? First up: the golden rules of the perfect lunch

Okay, first this: a take-it-to-work-lunch sounds simple, but there are rules (yes, sorry). Because what should such a lunch meet? Rule one: filling. Healthy is nice and all (think: salad with cucumber and tomato), but if you’re already hovering over the cookie jar at half past two, it’s not worth anything. So: make sure to include protein. A lot. Then you’ll survive the afternoon without a sugar dip (and without an embarrassing rumbling stomach during that one important meeting). Rule two: compact. It really has to fit in your lunchbox. And maybe even more importantly: it must not leak #awkward. Okay check. Now on to my favorite lunches from Monday to Friday.

Lunch on Monday: Salmon salad with sweet potato

Since it’s Monday anyway, you might as well survive it with a good-for-you lunch in your bag, right? Cook 50 grams of sweet potato and fry 120 grams of salmon (leftover from last night = bonus points). Throw 15 grams of spinach and 100 grams of broccoli in the pan. Let it cook nicely and then let it cool in the fridge (midnight preps). The morning before your workday starts, take everything out of the fridge and cut half an avocado into cubes. Make, if you like, a yogurt dressing with yogurt, oil, pepper, and salt.

Throw everything into your biggest lunchbox (the one from Mepal, you know the one), shake it a bit as if you’re making a TikTok salad and take a plastic bag for your dirty fork. Tadaaaa! Delicious, simple, and envy-inducing.

Lunch on Tuesday: Crispy turkey wrap with pesto

Tuesday can sometimes feel like the most boring day of the week, but it doesn’t have to be with this wrap. Quick, easy, and crispy—perfect for those long meetings. Take a whole grain wrap and spread a tablespoon of pesto (basil or tomato) over it. Add 15 grams of spinach and slices of tomato, followed by 100 grams of turkey breast and 30 grams of mozzarella. Toast the wrap in the pan (or use the air fryer for that extra crispiness), roll it up and wrap it in foil, so it stays together well.

Voilà, you have a lunch that is not only quick and tasty but also makes your workday easier. Bonus: your colleagues will be jealous. Cut your wrap, including the foil, in half and wow, it’s just like you got it fresh from that nice place around the corner.

Lunch on Wednesday: Avocado & cottage cheese toast (for the inner yoga girl)

This lunch is a perfect mix of proteins and good fats. Boil 2 eggs and toast 2 brown slices of bread in the meantime (if you want to be extra, spread a bit of chili oil on the bread before toasting). Mash (yes, we’re really going to mash) 2 scoops of cottage cheese, together with the 2 boiled eggs and half an avocado.

Once everything is well mixed, taste it and add some pepper and salt if needed. Take your toasted bread out of the toaster and top it with your divine mixture.

Lunch on Thursday: Healthy sushi salad

When you hear the words quick, cheap, and easy, you might think of your ex. But I think of this delicious sushi salad. Say ‘bye-bye’ to the stress you get from rice rolls. Grab a large lunchbox (yup, again) and slice 1/2 cucumber into thin slices. Chop 2 surimi sticks into pieces and combine all of this. Add half an avocado (that you of course cut into cubes) and 1 chopped green onion, and mix this together with 30 grams of herb cheese and 100 grams of smoked chicken. My tip for mixing? Shake the lunchbox as if your life depends on it.

Finish it off with a tablespoon of mayo (light= extra healthy), 1 teaspoon of sesame seeds and a pinch of chili flakes if you want some extra kick. Taste to see if it’s to your liking and add some soy sauce if necessary. Et voilà, sushi without a mess, love it

Lunch on Friday: Easy pita bread to go (because girl, it’s almost the weekend)

For the last day of the week, I keep it simple. Start with 2 white pita breads (preferably from the Appie) and warm them up in the air fryer until they are crispy. Cut them open and spread the inside with 1 tablespoon of light cream cheese. Add 2 slices of 20+ cheese, 100 grams of turkey breast (this is healthier than regular chicken breast, because it has less fat and more vitamins and other benefits), a few slices of cucumber, and a handful of lettuce.
