Friday afternoon with wine and GTs

and healthy snacks

So it’s Friday, and that means at around 5 o’clock most people will start popping some bottles and appease their evening appetite. You’ve always got the regular snacks like chips and dip and cheese and crackers. Kinda boring don’t ya think? Well I wouldn’t be a health editor if I didn’t enjoy decking the table with healthy snacks now would I? Combined with wine or gin-tonics of course.

Roasted Chickpeas

It’s like a bowl of nuts, but then a tad bit different.

What you need to make it:

-1 can of chickpeas

-1 teaspoon of paprika powder

-grinded sea salt

-a drop of olive oil

Heat up your oven to 180 degrees. Wash your chickpeas and let them percolate in a strainer. Drizzle some olive oil over the chickpeas and then the paprika powder and salt. Spread them out on a griddle on top of grease proof paper and heat them up in the oven for 35 minutes. Bon appetit!

Stuffed avocados

And then preferably mini avocado’s if you can get your hands on some. Fill them with mini shrimp or a bit of salmon or just use some olive oil, salt and pepper. Add a small spoon so it’s easier for everyone to scoop it out.

Frittata

Better known as a filled omelet. Beat the eggs and add your own choice of veggies, a bit of salt and pepper and optional: some cheese. Pour a hint of olive oil into a pan and then add the mixture. Cook it thoroughly and once it’s done, cut it into pizza slices.

Egg muffin

Grab a muffin pan, grease it up with coconut oil and add a tuft of spinach into each section. Add a slice of tomato and some goats cheese on top of that. Then, pour battered egg on top with a bit of added salt and pepper. Then chuck it into the oven for 20 minutes at 180 degrees and you’ll have the perfect snack, breakfast, lunch or an extra side dish for dinner.

Dates with cream cheese and walnuts

Exactly what you read above. Buy them fresh at a market, get rid of the pit and add a bit of cream chees in the crease. Top it off with a walnut and you’re good to go.
