Hoe je een snelle, gemakkelijke en heerlijke lunch serveert
Every day we have lunch with our neighbors (a production house that makes our videos and where we used to work in a little room upstairs), all cozily sitting around one big table.
The salads, rice waffles, crackers and eggs are all provided and made with love but on Friday it’s our shift. For half of the team it’s ‘fatty Friday’ and we’re off to get some fries while for the other half (which includes me) you’re allowed (if it’s your turn that is) to go crazy on the menu. Have you ever had to make lunch for a large group of people? Here are some tips that are fast, quick and easy and a great addition to the crackers, sandwiches and toppings that are already on the table.
Eggs deluxe
Everybody loves eggs. A boiled egg can be a little boring and fried might not be an option when cooking for a lot of people. Scrambled on the other hand is, easy to make in large portions.
Beat about ten eggs in a bowl and add salt and pepper. You can add some milk or cream to make them creamier.
Pour some coconut oil or butter into a heated pan then add the egg mixture. Stir carefully and keep doing so to prevent it turning into an omelet. Don’t cook for too long or it will dry out. Serve with some tasty smoked salmon.

Take an avocado and cut it down the middle, take out the pit and pour in some olive oil with a sprinkle of salt and pepper. In another bowl mix some small shrimp with mayonnaise (homemade or other) then put the mixture into the avocado halves, a little lemon juice and they are ready to serve (that’s half an avocado per person).

This might be more of a man thing but some ladies might wanna take a bite. Take a few flatbreads (you can cut them in half if you want a really thin crust) and top it with anything you want. I always start with tomato sauce, then some goat’s cheese for example and spinach. Mozzarella is an option or Parma ham and mushrooms. Pop them into the oven at 180 degrees for about 10 minutes and they’re done.

Very easy and often made for breakfast yet they are also easy to serve for lunch. You can even cut them into smaller pieces. Here’s a great recipe. Put some syrup on the table for those who have a sweet tooth.

This might take a little work but you will certainly steal the show.
chickpea salad
A very simple and nutritious meal. Take a big bowl and add: chickpeas, cherry tomatoes, rocket salad, avocado (in small pieces), rings of spring onion and some olive oil and balsamic vinegar. Finish it off with some salt and pepper. Bon appétit.
