Avocado fries from the Airfryer

Say friend, I understand that you've been busy, but it's time to take that Airfryer-friend out of the cupboard again. The poor thing. I have something really nice for you. None other than chef Jaimie van Heije (he cooks among other things the stars from the sky in Ouderkerk aan de Amstel) has put together a number of unique dishes for you that are perfect to present to your guests during the holidays. But if I were you, I wouldn't wait that long. Years ago, I had them for the first time on the side of the big water and that was also the last time. Jaimie, you are my hero. Fries. From avocado.Heaven. Crispy on the outside, creamy on the inside. Just as it should be.

This avocado snack does really well this weekend during drinks or just tonight on the couch, as a late-night snack. Just leave that Airfryer on the counter. This will be your new favorite, believe me.

1. Avocado fries

For 1 serving (about 4 people)

  • 200 grams flour
  • 2 dl egg white
  • 100 grams panko
  • 2 avocados
  • 3 ripe tomatoes
  • 1 small red onion
  • juice and zest of 1 lime
  • 1 tbsp chili sauce
  • tsp tabasco
  • 1 tsp ginger syrup
  • 2 tbsp olive oil
  • 1 tbsp smoked paprika powder

1. Clean the avocado and cut 3 halves of avocado into equal parts.

2. Dip the parts in flour, then in the egg white, and finally in the panko.

3. Drizzle with a little olive oil and bake them crispy in 8 minutes at 200 degrees.

For the salsa

4. Cut small cubes from the tomatoes and finely chop the onion.

5. Mix the tomatoes with the red onion, lime juice and citrus zest, chili sauce, tabasco, ginger syrup, and olive oil into a smooth salsa.

6. Cut the last half avocado widthwise into the thinnest possible slices and keep it in its original shape while cutting. When you're done, push the avocado diagonally away from the center so that you slowly get a long spiral. All slices should just touch each other. Then place it as a garnish on a plate like a rose. Fill the rose with the salsa and present the fries around the rose.
