Easy on the Table: spicy lentil burgers
It's Tuesday again, time for an easy meal. And today we're having burgers. Not from McDonald's or the snack bar around the corner, no friend, just nice and cozy under the blanket on the couch, in front of the TV, with the plate on your lap. And especially very much vegetarian. Because did you know that it's not only very healthy, but also fun for your wallet if you replace your piece of meat with a veggie variant? These lentil burgers are ready in no time and are finger licking good. Enjoy your meal.
For 2 burgers:
200 grams of red lentils
1 egg
1/2 red onion
2 tbsp spelt flour or oat flour
1 tsp smoked paprika
1 tsp harissa or 1/2 tsp cayenne pepper
1 tsp salt
1 avocado
1 handful of watercress
piece of crumbled feta
1 small red onion
2 sturdy spelt rolls
1. Finely chop the onion and sauté it briefly with some olive oil in a frying pan.
2. Season with salt and add the spices.
3. Cook the lentils according to the package instructions.
4. Let the lentils cool and blend them together with the egg and the flour in a blender or puree with an immersion blender.
5. Note: do not puree the mixture too finely, there should still be some chunks in it.
6. Form two burgers with your hands.
7. Take a frying pan, heat some olive oil and fry the burgers until crispy on both sides.
8. Slice the red onion into fine half rings and the avocado into slices.
9. Halve the rolls and top them with the burger, the avocado, the watercress, the onion, and the feta.
